Cruise ship jobs: F&B Manager

Requirements:
Preferred is degree in Hospitality management and applicable food handling certificates.
2+ years F&B experience, preferably on a cruise ship.
Fluent English, both written and spoken; additional language is a plus.
Word, Excel, and Fidelio.
Strong leadership skills and practice "leadership by example".
Excellent administrative skills.
Outgoing personality, open minded and flexible.
Strong interpersonal relationship skills
Responsibilities:
Coordinate assignments of cooking personnel to ensure economical use of food and
timely preparation.
May test cooked food to ensure palatability and flavor conformity.
Review menus and analyze recipes to determine labor and overhead costs, and
assign prices to menu items.
Monitor budget, payroll records, and review financial transactions to ensure
expenditures are authorized and budgeted.
Estimate food, liquor, wine, and other beverage consumption to anticipate amount to be purchased or requisitioned.
Plan menus and food utilization based on anticipated number of guests, nutritional value, palatability, popularity, and costs.
Investigate and resolve complaints regarding food quality or service.
Establish and enforce nutrition standards for dining establishment based on accepted industry standards.
Monitor food preparation and methods, size of portions, garnishing and presentation of food to ensure preparation and presentation in excellent manner.
Monitor compliance with health and fire regulations regarding food preparation and serving.
Organize and direct staff training programs, resolve personnel problems, and
evaluate employee performance in dining and lodging facilities.
Keep records required by government agencies regarding sanitation and food
subsidies where necessary.
