Cruise line jobs: Sous Chef

Requirements:
3+ years in a similar secondary position in a hotel or cruise ship
An Advanced Food Hygiene Certificate is desirable.
Fluent English.
Computer skills: Word, AmiPro.
Knowledge of U.S.P.H. standards and procedures.
Ability to perform under high levels of pressure.
Punctual.
Responsibilities:
Ensure smooth and efficient operation of allocated Food and Beverage outlets.
Assist Executive Chef with menu planning.
Daily menu briefing of lunch and dinner with galley crew.
Assist in guest chef programs, special functions, galley tours and cooking demos.
Supervise the operation and the delivery of the Corporate menu cycles.
Maintain exceptionally high hygiene standards in accordance with the Company
Food Safety Policy.
Check and sign food requisitions in absence of executive chef.
Determine size of food portions and observe staff serving food.
Ensure economical working procedures and minimization of food waste.
Check and supervise service hours (breakfast, lunch and dinner), announce orders, check arrangement of plates and ensure immediate service.
Assist F&B Controller during storing.
