Requirements:
4+ years Chef de Cuisine in 5 star operation: hotel, restaurant or ship.
Excellent knowledge of food, beverage and international cuisine.
Fluent English and preferably German and French.
Computer knowledge: Word, Excel, AmiPro, and Fidelio.
Strong leadership skills and practice "leadership by example".
Outgoing personality, open minded and flexible.
Professional appearance and excellent social skills.
Excellent organization skills.
Ability to perform well under pressure.
Responsibilities:
Ensure smooth running operation of department.
Supervision and daily schedule planning for galley crew.
Daily lunch and dinner menu briefing with galley crew, head waiters and dining room staff.
Estimate amounts and costs, and requisition supplies and equipment to ensure efficient operation.
Check and supervise service hours (breakfast, lunch and dinner), announce orders, check arranged plates and ensure immediate service.
Collaborate with specified personnel and plan and develop recipes and menus.
Assure that menu cycle is followed accordingly.
Inspect supplies, equipment, and work areas to ensure conformance to established
standards.
Record production and operational data on specified forms.
Train and otherwise instruct cooks and workers in proper food preparation
procedures.
Determine production schedules and staff-time requirements to ensure timely
delivery of services.
Evaluate and solve procedural problems to ensure safe and efficient operations.
Observe staff and work procedures to ensure compliance with established standards.
